It’s Brownies Time

Once, I was craving for Sugar Bowl Bakery’s Petite Brownie Bites. So, I asked the husband if we could pass by Costco on our way home to check it out. Unfortunately, there was none. We bought a huge box of Ghirardelli Triple Chocolate Brownie Mix instead. There are 4 pouches inside. Each pouch could make at least 16 brownies, that makes a total of 64 brownies. Quite a lot, right?

Now, I have two pouches left and it’s almost past the expiry date. Thank goodness I found some crafty recipes over the internet on how to bake these goodies aside from the usual brownie recipe. I just actually incorporated those recipes to the original Ghirardelli Triple Chocolate Brownie Mix. So, here they are:

Oreo Cheesecake Brownies

Ingredients:

1 pouch brownie mix

1 egg

75 ml water

75 ml vegetable oil

8 oz cream cheese, room temperature

1/2 cup granulated sugar

Semi-crushed Oreos for garnish

Chocolate chips (optional)

Procedure:

  1. Preheat oven to 160 / 325 / Gas Mark 3.
  2. Beat egg, water, and oil in a mixing bowl until completely mixed.
  3. Gradually add brownie mix and stir until well blended.
  4. Spread half of the batter in a lightly grease 8″x8″ or 9″x9″ pan.
  5. Cheesecake Layer – In a separate bowl, add cream cheese and sugar and mix vigorously with a hand or electric mixer until smooth.
  6. Turn the cream cheese mixture out over the brownie batter. Spread evenly with a spatula.
  7. Turn the rest of the brownie batter over the cream cheese.
  8. Lightly press crushed Oreos on top. Sprinkle chocolate chips, if preferred.
  9. Bake for 45-55 minutes. For glass pan, add 5 minutes to the baking time. Do not overbake. Fresh-baked brownies may appear underbaked but cool to doneness.
  10. Cool completely in pan before cutting.
  11. Store in a tightly covered container. It can last up to 10 days in the fridge and 6 months in the freezer.

Walnut Brownie Cookies

Ingredients:

1 pouch brownie mix

1 egg

75 ml water

75 ml vegetable oil

Crushed walnuts

Chocolate chips (optional)

Procedure:

  1. Beat egg, water, and oil in a mixing bowl until completely mixed.
  2. Gradually add brownie mix and stir until well blended.
  3. Stir in crushed walnuts until evenly distributed.
  4. Fold in more chocolate chips, if preferred.
  5. Cover bowl with a plastic wrap and chill in the fridge for at least 2 hours to 1 day.
  6. Preheat oven to 160 / 325 / Gas Mark 3.
  7. Line the baking sheet with a parchment paper.
  8. Scoop out 2 tablespoons of dough, roll it and place on the prepared cookie sheet.
  9. Bake for 10-12 minutes. Additional 3-4 minutes for bigger cookies.
  10. Let it cool completely before removing them from the cookie sheet.
  11. Share and Enjoy!
